Summer Pasta-less Salad

Since the weather outside has been too hot for even this heat junkie to handle — with temperatures reaching close to 100 °F — I’ve been avoiding my oven and stove-top and instead looking to water-packed raw fruits and veggies to get me through these sweltering days of summer.

This light summer salad is reminiscent of the pasta salad I used to enjoy as a wee one… except I left out the heavy pasta and replaced it with my fave go-to summer staple: zucchini “noodles”. If you don’t have a spiralizer, a vegetable peeler works great too.

Stollen Inspired Holiday Bread

The thing I love most about any holiday is the extra time my husband, kids and I get to spend together.  I love the ease of rolling out of bed in the morning and not rushing to do anything (except make coffee!), and leisurely taking our time munching on delicious foods and sipping beverages throughout the day… until evening hits and the last item on our agenda is to sneak in a few good flicks that coordinate with the season.

To prepare for my husband’s long weekend home from his day job, I spent all day yesterday baking and candymaking. We are well stocked for the upcoming few days… although I think we are already in need of more fudge. :\ One of the treats we had planned for breakfast this morning was this holiday bread. Fashionably jeweled with nuts and fruit, and lightly dusted with powdered sugar… I think it is quite obvious that I got this idea from looking at all of the beautifully studded stollen loaves permeating the internet this holiday season.

Although I have never actually had a taste of authentic stollen, my guess is that this recipe would be denser and more “nutty” than real deal. Like a “health nut” version of stollen :).

Wonderful sliced thin, toasted, spread with some jam, and enjoyed with a mimosa… and maybe some fudge.

Coconut Creamy Fruit Salad

This fruit salad (like most fruit salads, right??) is very simple to throw together and oh so tasty. The use of avocados, mangoes, and bananas only adds to the extra creamy deliciousness.

Speaking of deliciousness: VeganMofo is still going strong!! But my google reader may not survive this one. It is so chock full of awesome vegan eats, it just may explode. Seriously, I have got a lot of catching up to do!

It is in hectic (and yummy) times like these, that a nice easy fruit salad is the perfect treat to whip up. So easy, so sweet, so good.

Fruity Kale Salad with Coconut Lime Dressing

I know this is the second time (in a very short while) that I have posted a kale salad.  But here’s the deal, I love kale.  It is one of the few things I look forward to every single day.  I seriously believe I could survive off of raw kale and red wine for the rest of my life.  Add avocados and dark chocolate, and I know I could survive and be very very happy.

Anyways, since I eat raw kale salads all of the time, occasionally I find myself doing new and exciting things with them… like adding bananas and strawberries.  And occasionally it turns out to be an absolutely terrific idea.  This is one of those times.

I know the combo of everything sounds a little weird, but trust me- it’s terribly delicious.  It is much closer to a fruit salad than a traditional salad, but adding kale makes it the best of both worlds.

If you try it out, let me know what you think.  I know I will be adding kale to all of my fruit salads from now on.  Yum!
