Coconut Creamy Fruit Salad

This fruit salad (like most fruit salads, right??) is very simple to throw together and oh so tasty. The use of avocados, mangoes, and bananas only adds to the extra creamy deliciousness.

Speaking of deliciousness: VeganMofo is still going strong!! But my google reader may not survive this one. It is so chock full of awesome vegan eats, it just may explode. Seriously, I have got a lot of catching up to do!

It is in hectic (and yummy) times like these, that a nice easy fruit salad is the perfect treat to whip up. So easy, so sweet, so good.

Blueberry Avocado Salsa

I never used to like salsa. Not at all.

Not riding atop my favorite tortilla chip, not accompanying my fajitas, not even as a stand in for butter on my baked potato. Nope, I hated it.  I also used to loathe cilantro, as I understand many people do. Perhaps it was an acquired taste, because after years of relentless late night salsa snacking by my hubby… I finally caved and started devouring his favorite dip right alongside him.

It used to be that he could savor an entire tub all by himself with no competition trying to sneak their chip into the last bite. Not anymore. I have converted into a full fledged salsa fanatic. Now we buy two containers and polish off both within ten minutes, dueling chips in hand.

I even have developed a particular fondness for that stinky cilantro (but I would rather credit my love affair with Indian cuisine for that one). Mmmm… Baingan Bharta.

Anyways, did you know how wonderful cilantro, avocado and blueberries meld together?  They do, and this recipe is simple proof…

…that is, if you don’t hate salsa. :)

Lasagna with Creamy Red Wine Sauce

So, this may not be the most glamorous food I have posted, but let me start with a word in it’s defense.  This stuff is freaking incredible.  I mean it.  Sure, the sauce isn’t a brilliant bright red since it uses avocados and red wine (kinda pinkish orange), but once you taste it, you simply will not care how it looks.  I promise.

Chocolate Avocado Banana Bread

This is a fun twist on an old favorite.  I have been making this recipe for years and it always turns out perfectly. In fact, I’m pretty sure this was the first recipe I came up with “all by myself”.  :)

To make it gluten-free, I just subbed out a few different flours where I usually used all-purpose flour.  Feel free to re-glutenize it by subbing the 2 cups of AP flour back in, and leave out the xanthan gum.
