Today I’m excited to share with you a new book from the kitchen of one of my culinary heroes, Martha Stewart. Her latest book, Meatless, is quite unlike her typical tomes in that the entire book revolves around–as the title suggests–meat free recipes. And, even though every single recipe isn’t solely plant based, I can confidently say that most of the recipes within the pages of this beautifully illustrated book are vegan (even marked with a handy “V”), and pretty much all of the non-vegan recipes can easily be made vegan with non-dairy substitutions. There are also a ton of gluten-free recipes, also clearly labeled for your gastronomical enjoyment.
Some of you may feel underwhelmed that this book isn’t entirely plant based, but as a longtime (diehard!) fan of Martha Stewart, and with her obvious influence that has reached the homes of millions of people, I find this to be an incredibly positive step in the right direction. In fact, I’m downright giddy about it.
So, today I am featuring one of the recipes from the book as well as offering a copy of Meatless to one lucky reader. Avocado Salad with Bell Pepper and Tomatoes

Avocado shells make handy vessels for a bright salad made with the scooped-out flesh. Lime juice, garlic, and a pinch of cayenne flavor the dressing. The salad can also be served as a topping for quesadillas or as a fresh filling for tacos.
Serves 1
- 1 teaspoon extra-virgin olive oil
- Juice of ½ lime
- 1 small garlic clove, minced
- Pinch of cayenne pepper
- Coarse salt
- 1 firm, ripe avocado, halved and pitted
- ½ yellow bell pepper, ribs and seeds removed, diced
- 6 cherry tomatoes, halved
- 1 scallion, trimmed and thinly sliced
- 1 tablespoon chopped fresh cilantro leaves, plus whole leaves for garnish
1. In a small bowl, whisk together olive oil, lime juice, garlic, and cayenne. Season with salt.
2. Scoop out flesh from avocado halves, reserving shells, and chop. Transfer to a bowl and add bell pepper, tomatoes, scallion, and chopped cilantro.
3. Drizzle with dressing and season with salt. Gently stir to combine. Spoon mixture into reserved shells.
Garnish with whole cilantro leaves and serve immediately.

My favorite dish in the whole world is enchiladas, with sweet potatoes and beans and a green tomatillo sauce.
My favorite meatless Martha Stewart recipe is her hash brown quiche.
My favorite meatless dish is a Stuffed Zucchini. It’s easy and quick to prepare and taste so good. I’ve found that adding a sun-dried tomato vegan cheese and pinch of cilantro gives it the perfect kick.
Yum! Hard to pick a favorite–maybe curried sweet potato soup. :)

I’m with you – even if it has some vegetarian recipes, this is a BIG awesome thing and I was so excited when I saw this book!

how can I choose ONE favorite? the first thing that came into my mind was enchiladas – specifically my crispy sweet potato chipotle enchilada is a favorite around here!
Oh, so hard to choose! Probably burrito, because you can do so many different kinds of burritos with different flavours and it’s nice and portable.
Such a lovely giveaway. I have been a vegetarian for over 20 years, so how could I say what my favorite meatless meal is? Any Indian legume curry surely is up there for me and refried beans.

I like to mix soy chorizo, beans, tomatoes, corn, cumin, chili powder all cooked together with daiya vegan cheddar on top, then serve over polenta. :-)

My fav is Vegan Kare Kare, it’s a Pilipino Peanut Stew. So good!
My absolute favorite are black bean patties. Just changing a couple seasonings and it can go from Tex-Mex to Italian :)

wow, this is SO exciting!!! I’m totally pumped that veg recipes are getting such a big publicity push with a book from Martha Stewart, and although it would be amazing if they were all vegan, I think it would probably scare more people off in the end. Meatless, and including some vegetarian recipes, is a fantastic way to win people over and I’m 100% with you on this being a great step for getting attention and making plant-based recipes more mainstream. Once they see how great plant foods taste, they’ll be more likely to stick with it long-term. This book is a HUGE step in the right direction for the majority of people eating standard meat-based diets. YAY!!! My favourite meatless dish??!?!?! does a fresh juicy mango count? ;) Something more substantial – I’d say a good quinoa tabbouleh. I love the fresh flavor and eating a ton of parsley :)
My favorite meatless meal will always involve quinoa. I cook it with vegetable broth, then may eat it with organic frozen spinach or a baked sweet potato. For me, simple is best. I also love to roast vegetables; any vegetable and add some to a bowl of quinoa.

My favorite meatless dish is my modified taco soup. Before we went vegan we put ground beef in it (yuck!). So we doubled up on beans and now it’s a healthy delicious Mexican veggie soup :D It never lasts more than 2 hrs!

Wonderful! This all is so new to me, I have just recently (not many months ago) realised the absolute benefits not to mention ethics behind being a vegan and loving it. Though not totally vegan yet (want this shift to meatless and dairy free life be permanent, and taking it step by step) I already feel so much better without meat! My favourite meatless dish… oh, so many of them. Lets say Nepalese spinach balls called HARIYALI KOFTA. Can’t make then at home (yet) and frankly, could use a good cook book with meatless/vegan recipes. Love your blog! Thanks for the good work!
My favorite meatless dish is pad tofu: soft tofu with mixed cruciferous vegetables in a spicy thai sauce.
My favorite meatless dish would have to be zucchini noodles with grape tomatoes, artichoke hearts & black olives with basil olive oil poured over it. Yum!

My favorite, as well as my husbands, is black bean sweet potato burritos. He’s not a vegetarian (only dinners because I cook) and this recipe helped me convince him to give more things a try.

I’ve been vegan for seven years, and my favorite dish has been the same that whole time: peanut butter tofu with basil, broccoli, and jasmine rice!
After reading what other commenters have posted, I’m starting to think that I need to reassess my favourite meatless dish! There are so many other delicious things here I’d love to try. In any case, something that I often whip up is faux chicken breasts with red peppers roasted in balsamic and olive oil, that I put over wilted spinach and top off with mango. Kinda of like a warm salad. I would love this book to learn more recipes without having to rely on meatless “meat” substitutes. Especially since I’m attempting to go gluten-free as well.
Oh there is so many, but I think I most love a big spinach salad with lots of toppings (apples, carrots, cranberries, tofu, and AVOCADO!). Throw on some homemade dressing and its a delicious meal!
