
I know this is the second time (in a very short while) that I have posted a kale salad. But here’s the deal, I love kale. It is one of the few things I look forward to every single day. I seriously believe I could survive off of raw kale and red wine for the rest of my life. Add avocados and dark chocolate, and I know I could survive and be very very happy.
Anyways, since I eat raw kale salads all of the time, occasionally I find myself doing new and exciting things with them… like adding bananas and strawberries. And occasionally it turns out to be an absolutely terrific idea. This is one of those times.
I know the combo of everything sounds a little weird, but trust me- it’s terribly delicious. It is much closer to a fruit salad than a traditional salad, but adding kale makes it the best of both worlds.
If you try it out, let me know what you think. I know I will be adding kale to all of my fruit salads from now on. Yum!

Fruity Kale Salad with Coconut Lime Dressing
serves 4
Ingredients:
- 6 large leaves of fresh kale, rinsed and dried
- 1 banana, chopped
- 3 strawberries, sliced
- 4 cherry tomatoes, sliced in half
- 1 half of an avocado, cubed
- 1 clementine, or half of an orange peeled and divided
- 1 apple, chopped
- 1 tbsp cilantro (chopped fresh is best, but I used dried)
Dressing
- 1/4 cup dried coconut
- 2 tbsp lime juice
- 2 tbsp olive oil
- 2 tsp agave
- 1 tsp flaxseed
To prep Kale:
- dash or two of salt
Directions:
First, chop up kale into bite sized pieces like so:

Next, mix up the ingredients for the dressing in a separate small bowl until well blended.
Then, salt the kale leaves lightly and toss.
Massage the dressing (using your very clean hands) into the leaves until the kale becomes wilty and well coated with the dressing.

Now, in a separate bowl, take all of the chopped fruit (except for the avocado) and toss with cilantro.

Mix fruit with the wilted kale.
Top with the chopped avocado and a little more of the dried coconut.
Voila… fruity kale salad!

I recently tried adding banana to salad and fell in love with the creamy texture contrast it added. I am also member of the kale fan club so I really appreciate finding a new way to enjoyy old friend.
I love kale an incredible amount – from this post, probably as much as you do! I make kale salads frequently, as well as a million other dishes featuring my favorite green. I can’t wait for fresh, local strawberries to be ready for picking so I can try this recipe.

I’m finally getting a few moments here and there to catch up on my favorite blogs. This salad sounds AMAZING. I love that you not only incorporated kale into a fruit salad but also a few other traditionally savory items (avocado, cherry tomatoes and cilantro). What a great idea. I can’t wait to try it. I don’t have any apple right now so I might sub for some pineapple!
I just made this (well, my own rendition of it!) and it was delicious! I added grated beetroot, a kaffir lime leaf chopped very finely and a dash of wholegrain mustard mixed in with the kale..yum!! Thank you for publishing this salad recipe. Since I have a big garden full of kale I need creative variations on our standard stir fry. I didn’t use tomatoes or avocados, as they were going on our bbq polluck, but the salad was refreshing and delicious even without those additions.
