Vegan Thousand Island Dressing

I admit, I’m not a big salad eater.  And, when I do enjoy a salad, I usually opt for no dressing.  However, I realize many people enjoy dressings on their salads, sandwiches, etc.  Unfortunately, the selection of salad dressings suitable for vegans is not very large… especially if you are a fan of the creamy varieties.   In our household, there is one particular member who adores the taste of  Thousand Island Dressing.  And so, it became my duty to create a vegan version. It is now the favorite salad dressing.  Luckily, it is simple to create  if you have a few common ingredients.  This recipe makes a good amount, but it stores fantastically, so keep some around for a rainy day Reuben.

Vegan Thousand Island

1 cup Vegenaise

1/2 cup ketchup

2 tbsp yellow mustard

2 tbsp dill or sweet relish

1 tsp turmeric (optional)

1 tsp paprika (optional)

1 tsp black pepper

Mix all ingredients together.  Store in airtight container.
